Fall In Love With Good Dairy!

This week, as I continue my series of highlighting different products, I am talking about dairy.

Dairy in the form of milk, cheeses and drinkable yogurts.

The first two, milk and cheese come to us from Mill King Market and Creamery.  They are a three generation farm outside of Waco where they raise their cattle and operate their dairy.



The market carries Mill Kings milk, half & half and artisan cheddar cheeses and they have quickly become one of our most sought after products.

What makes their milk different than what you buy in the store?  Well, it is about as close to raw milk as you can get, however it has been pasteurized at a low heat.

In Texas,  it is illegal to sell raw milk anywhere, except the actual dairy where it is produced.  The next best thing, is milk that has been pasteurized at low heat, but has not been homogenized.

The benefits to low heat pasteurization are two fold.  First off, not all the bacteria in the milk are killed off.  We need (good) bacteria in order to ensure a healthy digestive system. This is dependent on the conditions in which the cattle are raised.

At Mill King Creamery, their cattle are grass-fed with some supplemental feed when the drought gets rough.  Also, they never use antibiotics or hormones on any of their herd.  They are free to roam and graze all they want. This ensures a healthy cow and healthy milk.

The second component to low heat pasteurization is the living enzymes in the milk.  When milk is heated at high heat, everything is killed off, including the enzymes.  With low heat, the majority of the good enzymes stay in tact.

I should add, that there is a third component as well.  When you ingest dairy products that are made from cows that have been grass-fed, you are also benefiting from a dose of vitamins A, D and K.  All very important vitamins for good health.
